This is a post for all the ginger lovers. Recently, I've had a total ginger-obsession mixing ginger syrup with fizzy water as a homemade ginger beer, or adding it to green tea (or any sort of tea for that matter). This homemade ginger syrup recipe is super simple and you also get a whole load of candied ginger as a by-product to be used in cookies, cupcakes or cocktails.

Ingredients: 500ml water, 400g sugar, 120-150g piece of fresh ginger, icing sugar for sprinkling. Peel the ginger and slice finely. In a medium sized saucepan bring the water and sugar to the boil. Place the ginger in the saucepan and leave to simmer for 1 hour.
Strain the ginger and leave the syrup to cool. Leave the ginger to cool on greaseproof paper and sprinkle with icing sugar. Once cool, use a funnel to pour the ginger syrup into containers (I used 2 glass bottle I had lying around and a jam jar). Put a few pieces of the candied ginger into each container. Label and date your bottles.

ReplyDeletenormally I only put it into hot water, drink the water when it's cold again and then eat the thin ginger slices. like the hot taste.
