I love love love sweets. Gummy sweets, marshmallows, boiled sweets, sour sweets, rock, candy canes, chocolate, pretty much anything sweet works for me. However, part of having a healthy diet includes steering away from artificial colouring, preservatives, etc. which is pretty hard when it comes to sweets. Yesterday I made candied lemon slices covered in chocolate and they were absolutely delicious. This is a great alternative and could be a lovely gift to take over to someone's house.
Recipe slightly adapted from here. Ingredients: water for boiling, ice cold water, 10 lemon slices, 1/2 cup sugar, 1/2 cup water, 50g chocolate.
Prepare a bowl of ice cold water. Cut your lemon into paper thin slices using a very sharp knife or a mandolin. Boil half a medium saucepan of water. When the water has boiled, remove the saucepan from the heat and place the lemon slices inside. Leave to stand in the water until soft (approx. 1 minute). Carefully remove the lemon slices and place in the ice cold water. Dispose of this water.
Put 1/2 cup sugar and 1/2 cup water in a saucepan and bring to a boil. The sugar should completely dissolve. Reduce the syrup to a simmer and arrange the drained lemon slices in one layer as shown below. Leave to simmer for about an hour until the pith (the white part) is translucent. Remove and leave to dry on baking parchment. Melt chocolate in a bain marie. Dip in the lemon slices half way and leave to set.
